Italian Wedding Soup

One of my all time favorite meals!  This soup will win anyone’s heart with its hearty, full flavor!  Try doubling the meatball recipe and saving half for another meal.  From Barefoot Contessa’s Back to Basics cookbook.  Serves 10-12.

Recipe

For the Meatballs

3/4 pounds ground chicken

1/2 pound chicken sausage (I like the Italian flavored)

2/3 cups fresh bread crumbs

2 teaspoons minced garlic

3 tablespoons chopped fresh parsley

1/2 cup Parmesan cheese, shredded

3 tablespoons milk

1 large egg beaten

Kosher sea salt and fresh ground black pepper

For the Soup

2 tablespoons good olive oil

1 cup minced onion

1 cup 1/4-inch diced carrots

1 cup 1/4-inch diced celery

10 cups organic chicken stock

1/2 cup white wine

1 cup small pasta such as tubetini or macaroni

1/4 cup minced fresh dill

12 ounces baby spinach, prewashed

Preheat oven to 350 degrees.  For the meatballs, place the ground chicken, sausage, bread crumbs, garlic, parsley, cheese, milk, egg, 1 teaspoon salt and 1/2 teaspoon pepper in a bowl and combine gently with a fork.  With a teaspoon, drop 1 to 1 1/4-inch meatballs onto a sheet pan lined with parchment paper.  (You should have about 40 meatballs.  They don’t have to be perfectly round).  Bake for 30 minutes, until cooked through and lightly browned.  Set aside.

In the meantime, for the soup, heat the olive oil over medium heat in a large dutch oven.  Add the onion, carrots, celery and saute until softened, 5-6 minutes, stirring occasionally.  Add the chicken stock and wine bring to a boil.  Add the pasta to the simmering broth and cook for 6-8 minutes, until pasta is tender.  Add the fresh dill and then the meatballs to the soup and simmer for 1 minutes.  taste for salt and pepper.  Stir in fresh spinach and cook for another minute, until spinach has just wilted.  Ladle into soup bowls and sprinkle each serving with extra grated Parmesan cheese.

Creamy Chicken Gnocchi Soup

Rich, creamy and comforting! Perfect soup on those cold winter days!

Recipe

3 tablespoons butter

3 tablespoons olive oil

1 onion, chopped

4 carrots, chopped

2 ribs celery, chopped

4 cloves garlic, minced

1/3 cup flour

2 breasts chicken

1 lb. gnocchi

4 cups chicken broth

1 and 1/2 cups half and half

4 cups fresh spinach

1 tablespoon fresh basil

Parmesan

Sea salt and fresh ground black pepper

In a skillet or shallow pan melt butter and add olive oil. Saute the onion, carrots, celery and garlic.  Add a 1 teaspoon salt. Once the onions are translucent add the flour. Cook for one minute stirring constantly. Add 1 of the cups of chicken broth and mix until thickened.  Transfer to the slow cooker.  Add the remaining chicken broth, gnocchi, half and half and chicken.  Cook on low for 6-7 hours or on high for 3-4.  Add the spinach and basil. Heat through for a few minutes, add salt if needed, pepper and Parmesan cheese. Serve.

Super Easy Coconut Pumpkin Soup

Coconut Pumpkin Soup

I have been loving this soup! It is so simple and great for just about all diets! It is so satisfying because of it’s high fat content. We are often on the go with the home build, so taking just a few minutes to put it all together and pouring into a thermos to drink throughout the day keeps me satisfied and going. The extra pumpkin seeds add a nice crunch!

Recipe

1 (15 oz) can organic pumpkin puree or 2 cups of another pureed squash

1 (15 oz) can organic coconut milk

1 tablespoon garlic chili sauce

1 teaspoon onion powder

1 teaspoon sea salt

1/4 cup sprouted or soaked pumpkin seeds

Place all ingredients except the pumpkin seeds into a small sauce pan and bring to a low boil. Add the pumpkin seeds and serve warm!

Home Build Update! December 2021

Hi Friends! It has been a while since I have posted. We have been very busy as you know, focusing on the home build. There is a light at the end of the tunnel and we are moving forward with anticipation and excitement. The journey has been long, but a blessed one. The floors are almost finished and cabinets will be installed this week. Trim, doors and then paint go in next. Thankfully we are hiring out the paint job and can focus on other things. Once they paint and countertops go in, the finish electrical, plumbing and banister/hand railings will finish the interior of the home.  Our goal is to be able to finish the home build by mid to late January as we have the exterior we need to install next and connect to water. Here are some of the projects we have been working on over the last few months.

The exterior doors and windows are all in. Final grade is just about finished. I love the rock walls for window wells.

Septic tank went in and is connected to the house. We just need to install the leech field.

The process of putting in the rough electrical, plumbing and HVAC took 2 solid months. Ryan did a great job on the plumbing and electrical. We hired out the HVAC which was a big job by itself! It was such a huge relief when we passed the 4-way  inspection. Insulation came next! What was really cool about our insulation inspection was the inspector said it was one of the best jobs he has seen and it was our teenage kids that did most of it!

Dry wall went in the week of Thanksgiving and took another week to mud and sand. It was such a sight to behold! Now it really is starting to look like a home! Each step means I don’t have to clean up that one thing ever again! LOL! I’ve spent so many days cleaning! I will go through each room when we finish.

My amazing kids helping to put in the flooring this last week. It will be another huge project we will be grateful for when finished in the next few days! Ryan is putting in the tile in the laundry room/bathrooms and cabinets were just delivered today! We will be hanging doors and trim this weekend to get ready for the paint guys to come.  Hopefully my next post on the home build will be the finished project! House Build Update – Framing, Windows and Doors

It has been a while since I have updated on the home build. The house is now framed and what a huge undertaking it was! We experienced many miracles to get all the materials we needed and acknowledge the hand of God in our lives! We are truly grateful for all that we have been able to do! We have been blessed with health and safety throughout this process and continue to pray for blessings.

One of the miracles we experienced was the ability to get LVLs at all. We drove to St. George to get them. The guy we bought them from said he felt like he should just help us out when he usually only sells full home packages. So we made a day of it and picked up our big headers that help frame the doors, windows and bearing walls!

Laying down the sub floor over the floor joists for the first floor. Floor joists were another item we couldn’t get. We found a friend of a friend who had enough 16″ floor joists for 8 homes just sitting on his property! He was going to build condos a few years ago and didn’t. He has now supplied multiple friends and family with much needed materials! Another great miracle!

This was our first wall we put up for the house! It felt so good to get it into place! Another miracle we experienced was a good friend who is a framer and general contractor. He happened to have some free time for a few weeks and helped us do all the really big things, including putting in our beautiful stairs! I am so impressed with people who frame houses. They are so strong and knowledgeable!

Jack and Mom taking a quick break on the cool concrete floor in the basement under the stairs, trying to get out of the sun for a bit. We were so tired! We had worked so hard carrying heavy lumber to the house to put up walls and joists in place. We joke that this is the house that Jack built!

Another miracle came our way when I was on the search for trusses. I was in tears when I called every distributor in Utah for them only to tell me they weren’t giving out anymore bids or they couldn’t get them in until the end of the year! We prayed for a miracle and finally found someone who could sell them to us from Laramie Wyoming! The trip was long and hard on my husband’s truck, but we made it all in one piece and were so very grateful!

We did sub-contract out the roof and it was put on in less than a week! That was such a relief, especially after all the rain we got this past summer. We are now mostly dried in for the winter.

At this point we are working on plumbing, electrical, sub-contracting HVAC and finishing up little areas of framing for the 4-way inspection. We hope to have it all ready for insulation and dry wall by the first of November. It is coming together slowly as we have done much of the work ourselves. We look forward to get moved in this winter! More updates to come!

I will be holding a family herbal care workshop on Saturday, October 16th at 12 PM in Spanish Fork. Space is limited to 12 attendees. We will discuss general illness issues that affect our families, my favorite natural supplements, as well as my protocol we used when our family had covid last winter. We will not go over first-aid treatments as that is a different class.

I will be serving a homemade nutritious lunch, nourishing herbal drinks and herbal treats with recipes. It’s a great way to get herbs into kids!
We will discuss and make herbal medicine, including using herbs you may already have in your kitchen or garden.

Late Summer Herb Walk

I will be holding one last herb walk for the year around the Big East lake up the Nebo Loop near Payson, Utah. The date is set for Saturday morning at 9 AM on September 18th. It is a 1 mile loop, very easy paved walk.  We will identify plants in their late stage of the growing season, including angelica, baneberry, nettles, water cress, mullein, rose, avens, alder, fir, poison hemlock, yarrow and lots more! Plan on 3 hours, not including drive time. Cost is $15 for the walk.  I will have limited spots. Garden Veggie Mediterranean Salad

Veggie Garden Greek Salad

I love making this salad because most ingredients come from my vegetable and herb gardens. It is packed full of flavor. Serve with pita or just make as a side dish.

Recipe

1 pound ripe tomatoes, chopped

2 bunches scallions, chopped

2 thin sweet green cucumbers (hothouse works), sliced

16 ounces garbanzo beans (optional) rinsed well

1/3 cup fresh parsley leaves chopped

1/3 cup fresh mint leaves chopped

1/3 cup fresh basil leaves chopped

Juice of 2 lemons

1 tablespoon fresh chopped garlic

1/2 cup olive oil

8 ounces feta cheese crumbled

Sea salt and pepper to taste

Mix all ingredients together into a large bowl and serve! Easy!
